10-minute Brownie Halwa

Perhaps... wait, no.. Definitely one of the tastiest things I have made and eaten in a while. Not to say easy (except the "cleaning the blender" part). This was my fix for all the sweet cravings after my elimination of most things sugary from my food recently. And it had some of my favorites... like Mejdool dates.. coconut.. cranberries.. and cacao!! :))

Crispy Kale Chips

This is perhaps the simplest recipe and one of the yummiest albeit heavily marketed and blogged about already. :)

Take fresh kale chips (not the curly ones as they do not get crispy), hopefully pre-washed. Otherwise wash them and leave them to dry a bit. Water ain't good for them crispy chips. Remove the ribs of the leaves from the middle or just cut the leaves using a kitchen scissors or tear them with hand.

Pre-heat over to 250-275 degrees F.

Throw kale leaves in a baking tray with a parchment paper lining. Sprinkle olive oil (I usually use infused olive oils like the garlic or pepper versions, as in picture) and use hands to nicely mix it up.

Sweet(ish) Quinoa Muffins with Pecans

Having enjoyed the savory version of the muffins Sunil decided to give the sweet ones a go, except that I did not want any refined sugars, agave syrups or any other added sugars. So we decided to throw in some high-sugar fruits like bananas.

It turned out pretty good. I was craving for a bit more sweet, but again that because I have been spoiling my palette with too much of those bad naughty sugars. Time to get the taste buds used to the natural hints of sugar.

Quinoa tikkis

I should have mastered the art of making fluffy Quinoa in the rice cooker to the T, but the stars were not aligned yesterday and the cooked Quinoa turned out a tad bit mushy and overdone. So I decided to give patties (or you may call them tikkies) a go.

'Cause I was super-hungry and time-strapped I did not pay attention to measurements and used what my mom says is instinct. But something tells me it doesnt matter. :)
